Got Cake?

While Chloe’s weekend theme was go, go, go, my weekend seemed to have an ongoing theme of cake! And who doesn’t like cake?

I had my latest cake decorating job for one of my dearest friend’s boyfriend’s brother. How’s that for several degrees of separation;-)? Anyhow, it was a Chicago Bears themed cake, which despite being a big fan of Chicago as a city, I’m DEFINITELY a Philadelphia Eagles fan.

Regardless, I got right to work on his cake, which was pretty fun to make:-) Here’s a peek of the finished product:

The 3-D football on the cake is from the Easter section at Target. It’s a plastic egg filled with candy!

When I baked the cake, I used 2 cake mixes (shh!), which is too much for my one 9″ x 13″ pan. So, I filled two teeny ramekins with the remainder of the mix, and baked them along with the cake. The result was 2 individual sized cakes, aka cupcakes:-) I ate one for breakfast (um, its like a muffin, right?) and decorated the other for my roommate:

I dyed some of my leftover white icing and some coconut shreds, topped it with two peanut butter M & Ms (of course!) and, voila! You’ve got a bird’s nest cupcake:-)

This weekend I went home to my parent’s house for Easter, and of course, my mom went all out with the Easter meal. Friends, it was AH-MAZING. Here’s a pic of my plate:

Starting at 1 o’clock and going clockwise we’ve got: homemade corn souffle, homemade pineapple stuffing (more like a bread pudding, and hands down my favorite part of the meal), homemade apple sauce, homemade mashed potatoes, homemade cole slaw, ham with homemade raisin gravy, sweet potatoes and apples (the only thing besides the ham that wasn’t homemade), zucchini bread and mini blueberry muffins. Whew! Talk about a feast!

And of course, the cake, which was a CHEESEcake;-) Also homemade:

Let’s just say I had my fair share of calories on Easter, but it was well worth it. My mom’s an amazing cook:-)

One more cake appeared in my way this weekend. While at home, I went to the Verizon store to get a new phone! Since starting the blog, I’ve been really wanting a smart phone, to keep up with all the social media outlets. Now I can tweet at ‘ya from anywhere; I don’t have to be sitting at my computer!

At the store, I was chatting with a woman who was trying to make the same decision as me: Droid X or iPhone ?

(I went with the iPhone;-) )

We started talking, and somehow food came up (um, that seems to happen with me). The woman mentioned that she liked to bake and she had made some carrot cake muffins for her Easter meal. She happened to have the cupcakes in her car, and she graciously offered one to me and the sales guy, to which I immediately replied, “Sure!” Um, you don’t have to ask me twice!

They were made with baby food, super moist, and topped with a yummy cream cheese icing. She gave me the recipe, so I’ll definitely be making these myself!

For Easter, I Was The Energizer Bunny!

Hi! Happy Monday Morning to you 🙂 I hope that you all had a wonderful weekend. I had a great weekend, although to be honest, I can’t remember much before yesterday. My Easter was pretty ridiculously jam packed! Now that the sun is up early, so am I! I can’t help it…I am an early bird and honestly love it. So…here is a little peek into my  Energizer Bunny Easter Sunday…

  • I was up at about 7 am on Sunday morning and headed out for a 5.3 mile run admiring the Easter Cake Balls that I had made on Saturday Night 🙂

  • I think that someone (cough cough Chris) might have gotten into them between Saturday night and Sunday AM…

  • Then I was off for my 5.3 mile run! The temp was about 65 degrees, the sun was shining. It was gorgeous!

  • After my run, I quickly showered and was asked by Chris to go get us a coffee at our local bakery. Mmm large coffee from Firehook Bakery. We are so lucky to have this gem in our neighborhood!

  • When I got home…the Easter Bunny had made a visit to my apartment 🙂

  • The Easter Bunny was REALLY good to me this year 🙂 not only did I get lots of candy (which I ate as an appetizer for breakfast), but he also brought me a unique home-made coupon in each of the eggs. My favorite…

  • And then brunch was made/consumed. Cinnamon swirl french toast topped with maple syrup and bananas and a side of scrambled eggs. It was the perfect stay at home Easter Brunch. Definitely went back for seconds of the french toast.

  • We decided to head to the grocery store after brunch and since it was Easter, it was empty! We were in and out and had first dips on all of the fruit and veggies. It was great. Fridge is now fully stocked 🙂

  • Due to the weather this week, I had to postpone a few of my bike rides, so after grocery shopping, I changed into my bike gear and headed out for what was supposed to be a 20 mile ride. 3 hours later, this is what my odometer read.

  • I did a 2o mile loop that took me back to my house, but when I got back, I was just not ready to get off of my bike. My legs were feeling strong and the weather was PERFECT, so I decided to keep going. Last weekend I completed 40 miles, which is the furthest I have ever ridden. Making it to 50 got me really excited for my 1/2 Ironman in July. If I can do 50 at this point in the season, I know that I can continue to get stronger and will REALLY be ready to go come game time! Only downside of the ride…I forgot sunscreen.

  • yeah…it is as painful as it looks. My legs really don’t feel too bad this morning, but my back is another story!
  • Once I got back from my ride (and ate a HUGE lunch) it was already 3:30. Chris and I had plans to head over to a friends house for a BBQ around 5:30, but of course,  I decided that I HAD to make some peanut butter date bread. Who wouldn’t want to bake after getting up at 7, going for a run, having an Easter egg hunt, making and eating brunch, grocery shopping and riding 50 miles.  Steph made some of this last week and I fell in love. She will be posting the recipe later this week!

  • The bread was out of the oven just in the nick of time and we were off to our friends. We had a great time at our friends and had a delicious dinner. We didn’t get home until about 11 last night (which is way past my bedtime on a Sunday night) which made getting up at 6 am for a swim this am a little tough…

Needless to say, it was a fantastic Easter. I am not a religious person and tend to focus the holiday on celebrating Spring and spending time with friends and family. I feel extremely grateful the life that I live, which allows me to have the types of day that I had on Sunday. I hope that you all had equally as wonderful spring weekends!
