I have GOT to work on this consistency thing. Pardon my MIA-ness, but I’m back with a fun little post for you!

Almost two weeks ago (whoops) Beth nominated me for a Liebster Award. Basically this is a fun little bloggie “award” that means you get to share some random facts about yourself with the world. The nominator poses the questions, so here are the ones Beth asked, along with my answers!

1. What is your go to snack?
Peanut butter. On a spoon. Sometimes with chocolate chips. Really, is there anything better?

2. What is your favorite at home easy meal to make?
Last year when we went to the mountains with the XP gang, Jessica made this AMAZING crock pot chili. I make a vegetarian version of it just about every week. It is SO easy and SO good.

 

Jess’s recipe:
Put 2 large chicken breasts on the bottom of a crock pot. Pour in 1 can of corn and 1 can of black beans (both drained). Add 1 can of Rotel. Season with a packet of Ranch dressing and half a packet of taco seasoning. Stir to mix. Place an 8 oz block of cream cheese on top and cook on low for 6-8 hours.

 

Steph’s version: I leave out the chicken, and use frozen corn because I usually have it on hand. I use kidney or pinto beans (whatever’s in the pantry) in addition to the black beans. Sometimes I’ll even add tofu. Instead of Ranch dressing mix, I use about 1 tsp of Penzey’s Fox Point plus some onion powder and a heaping tablespoon of their taco seasoning as well. Everythign else is the same- that block of cream cheese on the top is what makes this dish! Serve with tortilla chips!

3. What is your favorite way to unwind?
Yoga or swimming. One of my favorite Sunday evening activities is free Yoga in the Park at Curtis Hixon. This is a great way to wrap up the weekend and unwind!

4. How many pairs of running shoes do you currently own?

 

I think 4, but I really only use one. I really need to have two pairs that I rotate.

5. What was the best part of your day today?

 

Being at home! I just got back from a trip and I love coming back to my cats!

6. What was the worst part of your day today?

 

My flight was delayed, which meant I didn’t get home until 1:30 this morning (Thursday). That was not so fun.

 

7. What time do you get up every morning?

 

Well, my alarm is set for 8:30 am (yay working from home!) but I often wake up around 7:30. Sometimes the cats wake me up earlier than that, biting my toes which is obviously kitty-ese for FEED ME!

8. What is your favorite tv show?

 

I don’t have cable, but I do watch a few shows on Netflix. Right now, Scandal is my favorite. I’m all caught up and want more episodes! I’m also getting really excited for Orange is the New Black Season 2! Is it June yet?

 

9. What is your favorite running route and why?

 

The Ventnor/Atlantic City Boardwalk. Every time I go home to Jersey I have to get at least one run in on the boardwalk. You just can’t beat running along the ocean, hearing the waves crash, breathing in that salt air, and getting that extra little pep in your step from the boards. Ah. I’m smiling just thinking about it!

10. Who has been your biggest fitness inspiration to date?

 

This is a good question. I don’t think I really have one single fitness inspiration. I’m motivated by my fantastic teammates and I’d be remiss if I didn’t mention how awesome it is to scroll through my Instragram/Twitter/Facebook feeds and see so many of my friends (real and virtual) going out and getting fit! We all keep each other accountable, look to each other for support, and provide motivation to get out there and get back at it every day. I love that!

Thanks for that recipe! I put that question in b/c I need more stuff to cook. Nick doesn’t really like cream cheese but I assume it just makes the chili creamier, yes? Also, Orange season two is going to be awesome, I just know it! (If you can Netflix Homeland you should. I just started it last night. It’s pretty good for the trainer!)

I figured you were using it for your own personal gain! 😉 and yes, totally makes it creamier – no need to add any more cheese or cream cheese! I just bought the stuff I needed so I can make it next week! And I will def check out homeland! I’m in need of trainer vids!

I started watching Scandal got interested & then for a number of weeks I was working when it was on & don’t the the ability to record it so couldn’t figure out what was going on when I finally could watch it so lost interest. My favorite 2 TV shows are Revenge & Castle. Can’t wait for next season!
